Aubergine, or egg plant, is a garden produce poor in energy, as it contents in water is very high. It is rich in fibre (particularly its skin) and with few vitamins and minerals. However, it is a very valued type of food by different cultures, as many nations have typical dishes with this produce: xamfaina (a type of rattatouille) and escalibada (baked cold vegetables) in Catalonia, capotana in Italy, moussaka in Greece and imam bayildi in Turkey, although the most famous dish is the French ratatouille.
